Banana & Zucchini Bread

A yummy twist to traditional banana bread, this is a great recipe to sneak more vegetables into your baking! This bread is full of fibre, vitamins and minerals. The perfect lunch box snack!


  • 2 1/2 cups of oats blended into flour
  • 5 ripe medium bananas
  • 1/2 cup apple sauce
  • 1 medium zucchini (grate and squeeze water out with hands)
  • 1 tbsp. flaxseeds
  • 1 tbsp. orange zest
  • 2 tbsp coconut oil
  • 1/3 cup honey or maple syrup
  • 1 1/2 tsp. baking powder
  • 1 tsp. cinnamon

Optional toppings

  • 1 tbsp. desiccated coconut
  • banana slices


  1. Pre heat oven to 180C
  2. In a large mixing bowl add bananas and mash with a fork then add all ingredients except oat flour
  3. Once mixture is well combined, gently stir in the oat flour
  4. Line a bread tin with baking paper and pour in the mixture to the pan. Add toppings and place in oven for 30-40 mins. You should be able to poke a knife in the cake without any mixture left on it
  5. Take out of oven and let set in the bread pan to cool for 15 minutes
  6. Slice and enjoy warm or store in an airtight container in the fridge. Will last about 1 week.
